Project vision

The Algerian team brings together biologists, physicists, clinicians and computer scientists from Rouiba Hospital, VALCOR, LIMOSE and international research partners. The work focuses on characterizing allergenic molecules in Euro-Mediterranean recipes, validating clinical data through patient studies, and developing an intelligent application that translates complex immunochemical data into personalized dietary recommendations.

The project’s scientific objective is to enable consumers to safely adopt the Mediterranean diet while reducing hypersensitivity risks and preserving both nutritional quality and traditional flavours.

 

Initial objective

The application was designed to support the millions of people living with food allergies worldwide. While allergen avoidance remains the primary strategy for managing food allergies, it often limits social participation and quality of life.

Rather than eliminating allergens from traditional Euro-Mediterranean recipes, the project explores ways to reduce their allergenic potential while preserving their taste and cultural heritage. The application was developed to make these scientific advances accessible by analysing recipes and providing personalized recommendations based on each user’s allergy profile. The ultimate goal is to help people with food allergies enjoy traditional dishes more safely.

 

Scientific challenges

One of the main challenges consisted of bridging computational predictions with real clinical outcomes. For the first time in this field, digital models were validated through clinical studies involving patients. The initial results demonstrated a strong correlation between computational predictions and observed clinical responses, supporting the scientific robustness of the approach.

Another key challenge involved understanding the complex interactions between ingredients. This required the continuous expansion of the ingredient database, integrating food products commonly consumed across the Euro-Mediterranean region to ensure culturally relevant and nutritionally appropriate recommendations.

The methodology is fully aligned with the latest Codex Alimentarius guidance on allergen cross-reactivity. By combining clinical validation, comprehensive ingredient knowledge and internationally recognized safety standards, the project has delivered a reliable and personalized decision-support tool for people with food allergies.

 

Application features and benefits

The application acts as an intelligent nutritional assistant for individuals with food allergies. Users can create a personal allergy profile by entering test results or selecting allergens from a dedicated database. They can then analyse either a Mediterranean recipe available in the application or upload their own family recipes.

The algorithm evaluates each ingredient, estimates the individual risk level, identifies potential allergens and recommends suitable modifications, including ingredient substitutions, fermented food ingredients or antioxidant-rich combinations. Information is also provided on allergenicity reduction, possible symptoms and appropriate first-response measures.

The application offers significant benefits for multiple stakeholders. Individuals and families can enjoy traditional recipes with greater confidence, prepare safer meals and participate more easily in social occasions. Healthcare professionals benefit from an evidence-based decision-support tool that complements personalized medicine approaches. Current status

Clinical validation has successfully confirmed the predictive models. The application has been fully developed and is currently undergoing final refinements prior to broader deployment.
